Halloumi with Grapes Salad

An elegant twist on a romaine lettuce salad. Salad is topped with grilled halloumi cheese and grapes. Serve as the first course at your next dinner party!

3/4 lb halloumi cheese (350 g)

1/3 cup canola oil (75 mL)

1 tsp dried oregano (5 mL)

1 tsp fresh thyme leaves (5 mL)

3 Tbsp coarsely crushed coriander seeds (45 mL)

1/4 tsp freshly ground black pepper (1 mL)

1/2 lb seedless green grapes (250 g)

1 head Romaine lettuce, clean and torn (1)

2 green onions, chopped (2)

  1. Cut cheese into ½ – 1 inch (1 – 2.5 cm) cubes.  In a medium bowl, add cheese, canola oil, oregano, thyme, coriander and pepper. Mix well, cover and set aside for at least an hour to marinate. Cheese may be left overnight in refrigerator.
  2. Remove all stems from grapes, then wash and dry them. Set aside.
  3. In a bowl, mix romaine lettuce and green onions. Divide salad between four serving plates.
  4. Drain excess oil from cheese.  In a large skillet, sauté cheese mixture and stir fry until golden. Add grapes and toss with cheese for a few minutes, just enough to warm grapes slightly.
  5. Spoon halloumi and grapes on prepared salad and serve immediately.
