This classic marinade is a sure thing every time. The touch of lemon juice provides a fresh flavour to balance the slight earthiness of the oregano.
½ cup canola oil (125 mL)
¼ cup fresh lemon juice (60 mL)
¼ tsp salt (1 mL)
1 tsp sugar (5 mL)
2 cloves garlic, minced (2)
2 tsp dried oregano (10 mL)
1 Tbsp lemon zest (15 mL)
¼ tsp pepper (1 mL)
1. Combine all ingredients and marinate chicken breasts or chicken thighs, refrigerated, for 30 minutes.
