Beet Pesto Recipe

Beet Pesto

Try this fantastic nutty beet pesto sauce with pasta, on bread or as a pizza sauce to your favourite homemade pizza! Delicious.

Prep Time

Servings

3-4 cups (750 mL- 1L)

3 large beets (3)

2 cloves garlic, cut in half(2)

½ cup coarsely chopped walnuts (125 mL)

¾ cup grated Parmesan cheese (175 mL)

2 tsp lemon juice (10 mL)

1/3 cup canola oil (75 mL)

½ tsp pepper (2 mL)

  1. Heat oven to 400°F (200°C). Wash and trim beets. Wrap in foil and place on a small baking sheet. Bake for 60-70 minutes or until beets are tender.
  2. Peel beets and cut into chunks. Place in food processor.
  3. Add remaining ingredients and purée to desired consistency.
