Tomatillo Cucumber Lime Salsa
What are tomatillos? Some people refer to this little green tart fruit as a Mexican tomato. They are used in Mexican cuisine to make the green sauces. Tomatillos are part of the nightshade family and related to a goose berry. They can be grown in Manitoba so watch for them at the Farmer’s Markets. They have a husk that surrounds the fruit, peel that back, and give the fruit a wash as it might be sticky from his high pectin levels. Look for firm, green fruit. If you can’t find fresh, they can be found in the ethnic area of the grocery store in cans

Ingredients
- 4 small tomatillos,husked and finely diced
- 1 cup English cucumber, finely diced (250 mL)
- 1 garlic clove, minced
- 1 small jalapeno pepper, seeds removed and finely diced
- 2 Tbsp fresh cilantro, chopped (30 mL)
- 2 green onions, finely chopped
- 1 lime, zest and juice
- 1 Tbsp canola oil (15 mL)
- 1 tsp granulated sugar (5 mL)
Directions
- In a medium bowl, combine tomatillos, cucumber, garlic, jalapeno pepper, cilantro, green onions, lime zest and juice, canola oil and sugar.
- Marinate for 1 or 2 hours in the refrigerator. Transfer to serving dish.
