Quick Granola Bars

These nut-free, full of fibre bars are easy to take on the go for pre-game snacks and lunches. Customize these bars by swapping out the dried cranberries and apricots for your family favourites.

2 1/2 cups whole oats (625 mL)

1/4 cup wheat germ (60 mL)

1/4 cup brown sugar (60 mL)

1/2 cup honey (125 mL)

1/2 cup canola oil (60 mL)

2 tsp vanilla (10 mL)

1/2 cup dried cranberries (125 mL)

1/2 cup slivered dried apricots (125 mL)

  1. Spread oats on a large, shallow foil-lined baking sheet. Bake at 350°F (180°C) for 5 minutes. Stir and bake another 4-5 minutes until oats are lightly toasted. Transfer to a large bowl. Add wheat germ and toss to mix with the oats.
  2. Combine brown sugar, honey and canola oil in a small saucepan over medium heat. Whisk to combine ingredients. Cook, stirring occasionally until sugar dissolves completely, about 4-5 minutes. Remove from heat and stir in vanilla. Pour mixture over toasted oats and mix well.
  3. Stir in dried fruit and mix well.
  4. Line an 8 inch (20 cm) square pan with foil. Lightly spray with canola oil spray. Transfer granola mixture to the prepared pan. Press mixture firmly into the pan. Cover and refrigerate for approximately 2 hours.
  5. Remove mixture from the pan. Cut into bars.
